Cheesy Chicken and Broccoli

1 small bottle of cheese whiz
1 can cream of chicken soup
1 cube butterfrozen broccoli
4 -5 cups cooked and cubed chicken
1 1/2 cups uncooked rice
-Combine cheese, soup, butter and rice, then pour over chicken and broccoli, cover with foil, and bake @350 degrees for 1 1/2 hours or until rice is done!

24 rhodes rolls cut in quarters (let get thawed enough to cut with scissors)
1 pkg pepperoni (3-4 ounces)
1/2 jar favorite spaghetti sauce
1/2 tsp garlic salt
1 tsp oregano
2 cups mozzarella cheese

Place rolls in a greased 9X13 pan. Pour spaghetti sauce over top of rolls. Sprinkle with garlic salt and oregano. Cut 3/4 of package of pepperoni in quarters. sprinkle pepperoni in with rolls, trying to get down in cracks a little. Top with Mozzarella. Top with remaining pepperoni. Let raise 2-3 hours. Bake at 350 degrees for 25-30 minutes. If top starts to get too brown, cover lightly with foil until dough is cooked through.

3 Cups cooked white rice
1 10ounce pkg. frozen broccoli
3 cups cooked chicken cubed
2 cans condensed cream of chicken soup
1 cup mayonnaise
¾ cup milk
½ fresh squeezed lemon
2 teaspoons curry powder

Spoon rice into baking dish and spread evenly.
Scatter broccoli over the rice.

In a large bowl mix soup, mayonnaise, milk, lemon juice and curry.
Stir in chicken and pour evenly over the broccoli and rice.

Bake 350 for 30 covered. Uncover and bake 15 minutes more.

Spaghetti Pie

6 ounces spaghetti
2 1/2 quarts boiling water
1 tablespoon vegetable oil
2 teaspoons salt
2 eggs
1/3 cup grated Parmesan cheese
2 tablespoons butter, softened
1 cup cottage cheese
1 tablespoon vegetable oil
1 pound lean ground beef
1 onion, chopped
1/4 cup chopped green bell pepper
1 cup chopped tomatoes
6 ounces tomato paste
1 teaspoon white sugar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon garlic powder
2 ounces shredded mozzarella cheese
Directions:

1.Cook spaghetti in water with 2 teaspoons salt and 1 tablespoon oil until tender but still firm. Drain. Add eggs, Parmesan cheese, and butter. Mix and shape into a crust in greased 10-inch pie plate.
2.Spread cottage cheese over crust. Preheat oven to 350 degrees F (175 degrees C).
3.Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Scramble-fry beef, onion, and green pepper until beef is thoroughly browned. Mix in tomatoes, tomato paste, sugar, oregano, 1/2 teaspoon salt, and garlic powder. Spread mixture over cottage cheese.
4.Bake uncovered at 350 degrees F (175 degrees C) for 30 minutes.
5.Sprinkle with mozzarella cheese and bake 5-10 minutes more.

Baked Potato Casserole

1 package shredded frozen hash browns
1 cup cooked and crumbled bacon (or precooked bacon bits, not imitation)
1 pint sour cream
½ cup butter or margarine, divided
2 cups shredded cheddar cheese
½ cup chopped green onions
½ cup seasoned breadcrumbs

Mix together hash browns, bacon, sour cream, ¼ cup butter (melted), cheese and onions. Place in a 9X13 pan. Sprinkle breadcrumbs over the top and top with remaining dabs of butter. If freezing, see directions below. Otherwise, bake at 375 degrees for 1 hour.

Freezing directions: Place in a disposable aluminum pan and cover with foil

1/4 cup soy sauce
1 cup
water
1/2 teaspoon
ground ginger
1/4 teaspoon
garlic powder
5 tablespoons packed
brown sugar
1-2 tablespoon
honey
2 tablespoons
cornstarch
1/4 cup
cold water

Directions
1. Mix all but cornstarch and 1/4c water in a sauce pan and begin heating.
2. Mix cornstarch and cold water in a cup and dissolve. Add to sauce in pan.
3. Heat until sauce thickens to desired thickness.
4. Add water to thin if you over-thick it :).

Beef & Broccoli Calzone
1 lb. Ground beef, browned until crumbly and drained
1 (10 ounce) package frozen chopped broccoli, thawed and drained
1 c. shredded mozzarella cheese
½ c. chopped onion
¾ c. sour cream
¼ tsp. Salt
¼ tsp. Garlic powder
½ tsp. Italian seasoning
1 loaf frozen bread dough, thawed

To FREEZE: Combine ground beef with other ingredients (except bread dough) in a bowl. Roll our bread dough to a 9”x13” rectangle. Spoon filling onto one side of the dough, leaving a border of dough on three sides. Fold over bare side of dough and pinch ends together. Spray lightly with cooking spray and wrap in plastic wrap. Wrap again in tin foil and freeze.

To COOK: Thaw overnight in refrigerator. Unwrap calzone and place on cookie sheet. Loosely cover with plastic wrap to prevent drying. Allow to rise, but not double. Cook 20-30 minutes in a 350 degree oven until golden. Slice and serve.

SWEET AND SOUR MEATBALLS
1 cup pineapple juice
1 1/4 to 1 1/2 cup sugar
1/2 cup vinegar
1/2 cup ketchup
1 tsp. chicken bullion
2 Tbsp. corn starch

Mix all ingredients. boil till sauce thickens. add meatballs, pineapple, green pepper, onion or whatever you prefer. serve over rice.

Mini Meatloafs

2 lbs Ground Beef
1 Cup Saltine Crackers, Crushed
1/2 C Onion, Chopped
1/2 C Ketchup
1 tsp Salt
1/2 tsp Pepper
1-2 eggs

Mix all ingredients together and then shape into 6 "mini" meatloafs. Top with more Ketchup when baking. Bake at 350 degrees for 30 minutes. Optional: Top with cheese the last 5 minutes.

1lb Hamburger
1 can Corn
1 can Whole Tomatoes
1 can Green Beans
1/4 whole onion chopped
1 can Beef Stew
1/2 Cup Beef Broth
1 can Italian Tomatoes
1 tsp Salt & Pepper
Mashed Potatoes

Directions
Fry your meat with onions, omit all the fat. Crush cans of tomatoes. Mix meat, tomatoes, stew and broth together and place in a casserole dish. Sprinkle with salt and pepper. Cover with corn and green beans, and then top with mashed potatoes. Then brush butter on top.
Place in oven at 325 degrees for about 40 minutes or until you see a golden crips top. Sprinkle with cheese 2 minutes before done.

1 1/2 to 2 lbs sirloin steak cut into bite size pieces
1/2 cup soy sauce
1/4 cup water
2 Tbsp molasses

Place all ingredients in a freezer bag. Marinate for 4 hours. Place on skewers. Grill.

5 lb Pork Butt Roast
Liquid Smoke
Coarse Sea Salt
Cooking Bag

Rub the pork roast with liquid smoke; don't be afraid that you will use too much, as it gives the pork a great flavor. Rub with the sea salt (about a 1/4 cup). Put in a cooking bag and bake in the oven according to directions on the cooking bag. It will be done whe the meat is falling apart. You can also cook the roast by putting it in a Crockpot and cooking it all day or wrapping several layers of foil in a roasting pan and roasting in the oven at 300 degrees for about 5 hours. When you remove the meat from the bag or pan it should be falling apart. Taste and add more salt if necessary before serving.

Heat roast beef and Au Jus til hot. Put roast beef on buns and pour Au Jus into cups and serve.

6 boneless, skinless chicken breasts
½ cup ketchup
½ tsp Worcestershire sauce
1 tsp. mustard
½ cup crushed pineapple with juice
½ cup brown sugar

Mix all ingredients together. Bake at 350* for 45 minutes or stew in slow cooker for 4-6 hours and serve over rice.

1 green pepper
2 15 oz. cans tomato sauce
1 can olives (sliced)
2 12 oz. cans tomato paste
2 envelopes italian style sauce with mushrooms
3 c. water
1 Tbsp. sugar
1 tsp. oregano leaves
2 tsp. garlic salt
1 bay leaf crumbled
1 lg. can mushrooms ( or 2 small!)

**cook meat, onion, and pepper. stir in remaining ingred. cover and simmer!

Honey Mustard Chicken

6 boneless skinless chicken breasts
1 family size cream of chicken soup
1/2 bottle (i use the whole bottle!) Paul Newman's lighten up honey mustard dressing
1 bag baby carrots

Put all together in a crock pot. cook on low 6-8 hours. break chicken into smaller pieces. serve over noodles or rice.

Shredded Lime Chicken

4-5 boneless chicken breasts (about 2.5 to 3 lbs.)
1 1/2 cups of 7-up or Sprite (12 oz. can)
1/2 to 1 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
2 limes (~4 Tbsp. lime juice)

Cook in a crock pot on medium heat for 8 hours or 6 hours on high heat until chicken falls apart and shreds with a fork. Stir in the juice of 2 limes before serving. This recipe is part of a Cafe Rio Style Mexican Shredded Chicken Salad. When we don't have everything to make the full recipe we just make it like burritos.

For Cafe Rio Style...Serve on a warm flour tortilla. Melt cheese on tortilla if desired. Layer on rice (cilantro rice), black beans, chicken, lettuce, fresh cilantro sprigs, grated cheese, tortilla chips, and creamy tomatillo dressing. Add salsa, guacamole and juice from a lime wedge to taste.

For anyone who wants to make this more like the Cafe Rio Style here are the recipes for the Creamy Tomatillo Dressing and Cilantro Rice:
Creamy Tomatillo Dressing
1 packet Hidde Balley Ranch dressing mix (or 3 Tbs. dry mix)
1 cup mayonnaise
1/3 to 1/2 cup buttermilk
3-4 tomatillos (look like green tomatoes with papery outer covering)
1 cup fresh cilantro lightly chopped (1 bunch = about 2 cups chopped)
1/2 tsp. pepper
2 cloves garlic

Take the papery layer off the tomatillos, wash, and chop. Chop the garlic. Wash and cut the cilantro into abut 1-2" segments. Put all ingredients in the blender and mix thoroughly. Refrigerate. Best made the day before. Keep covered for several days. Makes 2 cups.

Cilantro Rice
2 cups uncooked rice
2 cups chopped cilantro
1 tsp. salt
1 cup Salsa Verde (Green Salsa found in Mexican Food aisle)
2 Tbs. dried minced onionWash and chop the cilantro.

Bend the cilantro with 2 cups of water and pour in the pan for cooking the rice. Add two more cups of water, the salt, Salsa Verde and onion. Bring to a boil. Stir in the rice in the boiling water. Cover and turn down heat to very low and steam for 30 minutes. Makes about 10 servings.

Chicken Cordon Bleu

Chicken Cord-on-bleu casserole

3 cups cooked, cubed chicken
2 cups cubed ham
1 1/2 cups shredded cheddar cheese
1 1/2 cups half and half
1/2 cup chopped onion
2 T butter
3 T flour

Saute onions in butter, add flour. Stir in half and half and bring to a boil slowly until thick, stirring constantly.
In a separate bowl, mix together chicken, ham and cheese. Pour sauce over and mix well. Pour into a 9X13 pan. Sprinkle with topping. Bake at 375 degrees for 45 minutes.

Topping:
1/2 cup bread crumbs
1 T. melted butter
1/4 cup grated swiss cheese

Steak and Everything Sandwiches

1 lb. deli style roast beef,
shredded1 onion,
sliced1 pepper,
sliced1 cup sliced mushrooms
1 pkg. cream cheese
6 hoagie buns
1 cup mozarella cheese

Saute veggies in a little olive oil. Add shredded meat and desired amount of cream cheese (recipe calls for the whole pkg, but some might like a little less). Heat until cream cheese is melted and meat is warm. Toast buns. Spoon meat mixture onto buns and top with cheese.

1-3 C Cooked Chicken Diced
1/4 C Butter
1/3 C Flour
1/3 C Chopped Onion

1 1/2 C Chicken Broth
1/2 C Milk
2 C Mixed Veggies

Melt butter over medium heat. Add onion and cook until tender. Stir in flour, salt and pepper. Add broth and milk. Heat to boiling and stir constantly for 1 minute. Stir in chicken and veggies. Spoon into crusts. Bake at 425 degrees for 35-40 minutes.

Creamy Garlic Chicken

1 1/2 to 2 lbs. of chicken, cut into strips
1 1/2 cups of seasoned bread crumbs
1 pt. (16 oz.) sour cream1
1/2 cups whole milk
1 1/2 tsp. crushed garlic
1 1/4 tsp. salt
1 1/4 cup parmesan cheese
1 (10 oz.) can garlic, onion diced tomatoesItalian seasoning and basil leaves

Lay chicken strips in bottom of pan. Sprinkle bread crumbs over top. Combine sour cream, milk, garlic, salt in a pan and mix together over medium heat until smooth. Pour over chicken. Sprinkle parmesan and seasonings on top. Opt. cut up fesh tomatoes or canned and pour over the top. Cook at 375 degrees for 25-30 minutes or until chicken is done.

6 boneless pork chops
1/2 cup honey dijon mustard
2 tbsp worcestershire sauce
1 cup italian bread crumbs

In a bowl, combine mustard and worcestershire sauce. Dip porkchops in mustard mixture and then in bread crumbs to coat. Place on a broiler pan and broil on low each side 10-15 minutes or until done.

4 Boneless, Skinless Chicken Breasts (Cube if desired)
1 Envelope Italian Salad Dressing Mix
1/4 Cup Water
1 Pkg Cream Cheese, softened
1 Can Cream of Chicken Soup
1 Can Mushrooms

Place chicken in a greased slow cooker. Combine salad dressing mix and water. Pour over chicken. Cover and cook on high heat 3 hours. In a small mixing bowl beat cream cheese and soup until blended. Stir in mushrooms. Pour over chicken. Cook 2 hours longer on high heat or until chicken juices run clear. Serve over noodles.

1 Small Onion
Salt & Pepper to Taste
1 Can Cream of Mushroom Soup
1 1/2 Can Milk
1 pkg Mixed Veggies
1 Pkg Tator Tots

Directions: Brown Hamburger and Onion with salt and pepper. Add milk and soup. Stir in veggies. Top with Tator Tots. Bake uncovered at 375 degrees for 1 hour.

Meat Loaf With Potato Filling

Meat Loaf with potato Filling

3 t. chopped fresh parsley
2 c. mashed potatoes
1 lb. lean ground beef
1 c. plus 2 T. bread crumbs
1/2 c. water
1/2 c. grated parmesan cheese
2 eggs
1 small onion, chopped
Salt and pepper to taste
1/4 c. olive oil
1/2 lb. mozzarella cheese, sliced

Blend 1 tsp. Of the parsley with mashed potatoes; set aside. In a large bowl, mix beef, 2 tsp. parsley, 1 cup of bread crumbs, water, parmesan cheese, eggs, onion, salt, and pepper. Mix well. Brush a 10 inch baking dish with 1 T. of olive oil; Sprinkle with remaining bread crumbs. Place 1/2 of beef mixture in dish. Top with mashed potatoes and mozzarella cheese. Place remaining beef on top, brush with remaining oil. Bake at 350 degrees for 25 minutes. (Serves 6)

Chicken Parmesan

Chicken Parmesan
1/2 C. dry bread crumbs
2 Tbsp. grated Parmesan cheese
3/4 tsp. Italian Seasoning
1/2 tsp. Garlic Powder
1 1/4 lb. boneless skinless chicken breasts
1 egg, beaten
1 can (8 oz) tomato sauce
3/4 C. shredded mozzarella cheese

To freeze: Combine first four ingredients in a shallow bowl. Dip each chicken breast in beaten egg, then roll in bread crumb mixture to evenly coat.

Place chicken on a greased cookie sheet or jellyroll pan. Bake in preheated 375' F. oven 10 min. Turn chicken over; bake 10-12 min. or until chicken is thoroughly cooked.

Freeze in 1 gallon bag with separate bags of sauce and shredded cheese.

To serve: Thaw overnight in the refrigerator. Reheat chicken in 375' F. oven until heated through and crust is crispy. Spoon tomato sauce over chicken. Sprinkle cheese over top. Bake an additional 3 minutes or until cheese is melted.
Makes 6 servings

Salsa Chicken

6 Boneless, Skinless Chicken Breasts
2 1/2 Cups Salsa
Uncooked Fresh Tortillas

Add chicken to slow cooker.
Pour salsa over chicken. Cook on low for 6 to 8 hours.Remove from heat and shred chicken. Heat skillet to medium heat and cook tortillas til golden brown on each side. Serve with sour cream.

2 Cups Apple Juice
1/2 Cup Brown Sugar
1 tsp Cinnamon
Fully Cooked Ham Slices
2 Apples, Chopped

Mix juice, sugar, cinnamon and apples together. Put ham in crockpot and pour mixture over it. Cook on low for 4 to 5 hours or until apples are tender. Use a slotted spoon to remove apples and serve over ham and rice.

Divine Crockpot Chicken

5-6 boneless skinless chicken breasts
1 can cream of celery soup
1 can cream of mushroom soup
1 envelope dry onion soup mix
1 tsp dried parsley

place chicken in crockpot. Mix all other ingredients together and pour over chicken. Cook on low for 4-6 hrs. Serve over pasta or rice.

HAMBURGER CASSEROLE
1 1/2 lbs. hamburger
1 c. onion
1 12 oz. can corn
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. sour cream
3/4 t. salt
1/4 t. accent (optional)
1/4 t. pepper
3 c. noodles (12 oz.)
1 c. buttered bread crumbs
**Brown hamburger and onion. boil noodles. mix all ingredients except bread crumbs. put in casserole dish and top with bread crumbs. Bake uncovered @ 350 degrees for 30 min.

AUTUMN SOUP

1 lb. Hamburger or stew meat
1 small onion
1 cup carrots sliced
3 stalks celery
1 cup canned or frozen corn
1 lb. potatoes diced
1 quart stewed and diced tomatoes
1 small can tomato paste or sauce
Basil and oregano to taste.

Fry hamburger and onion. Add all ingredients
To slow cooker and slow cook 4 hours or until
Potatoes and carrots are soft. Add salt and pepper
To taste.

Chicken Parmesan

Chicken Parmesan

1 chopped onion
2 cloves garlic, minced
4 - 5 stems fresh parsley, chopped
pinch of rosemary
pinch of sweet basil
1 quart of chopped tomatoes (I blend in food processor)
Garlic salt to taste
Breaded chicken breasts
Mozarella cheese

Saute the onion, garlic, parsley, rosemary, and basil in vegetable oil until tender. Add chopped tomatoes and garlic salt. Simmer for 10-15 minutes.
Pour over breaded chicken breasts. Bake at 350 for 1 hour until chicken is cooked through. Top with mozarella and bake 10 minutes until cheese is melted. Serve over linguine noodles.

25 frozen italian style meatballs
3/4 c chopped carrots
1 tsp dried thyme leaves

1 c pearl barley
2 cans (14 oz. each) beef broth
1 can (14 oz.) diced tomatoes with Italian seasoning undrained

6 Boneless Pork Chops
1 Can Cream of Mushroom Soup
1/2 Cup Light Sour Cream
1/2 Cup Skim Milk
1/2 tsp Pepper
1 - 24oz Bag Hashbrowns
2 Cups Cheese
1 Can (2.8oz) French Fried Onions (I used cheddar flavored)

Season Pork Chops with Season Salt and Garlic Salt and the brown in 2 tsp Olive Oil.
Meanwhile, in a large bowl, combine soup, milk, sour cream and pepper.
Stir in potatoes, 1 Cup of Cheese and 1/2 of the onions
Spoon mixture into a greased 10x13 pan
Top with Pork Chops
Bake covered for 40 minutes at 350 degrees
Uncover and sprinkle remaining cheese and onions over the pork chops
Bake for 5 more minutes

Simply Sour Cream Chicken Enchiladas

Simply Sour Cream Chicken Enchiladas
SERVES 8
Ingredients:
1 lb. chicken breast, diced
1 medium onion, chopped
1 Tablespoon vegetable oil
8 (8 inch) flour tortillas, softened
1 1/2 cups grated monterey jack cheese or mexican blend cheese, divided
1/4 cup butter
1/4 cup flour
1 (15 ounce) can chicken broth
1 cup sour cream
1 (4 ounce) can chopped green chilies

Directions:
1. In frypan, cook chicken and onion together in oil over medium heat until chicken is done.
2. divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
3. Roll enchiladas and place seam-side down in 9x13 baking dish that has been lightly sprayed with nonstick cooking spray.
4. melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually wisk in chicken broth then bring to a boil stirring frequently.
5. remove from heat; stir in sour cream and green chilies; pour sauce evenly over enchiladas.
6. Top with remaining cheese (baking dish may be double wrapped and frozen at this point) and bake @400 degrees for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

Mini Meatloafs

2 lbs Ground Beef
1 Cup Saltine Crackers, Crushed
1/2 C Onion, Chopped
1/2 C Ketchup
1 tsp Salt
1/2 tsp Pepper
1-2 eggs

Mix all ingredients together and then shape into 6 "mini" meatloafs. Top with more Ketchup when baking. Bake at 350 degrees for 30 minutes. Optional: Top with cheese the last 5 minutes.

Meatball and Sweet Onion Subs

3/4 C Packed Brown Sugar
1 C Water
1 6oz Can Tomato Paste
1 Large Sweet Onion Cut in 1/2 and Sliced
6 Submarine Hoagie Buns, Sliced
1 Cup Cheese

Mix Water, Brown Sugar, and Tomato Paste in a 3-4 quart Crockpot. Stir in Onions and Frozen Meatballs. Cook on Low Heat 6-8 hours. Usually 5-6 is plenty of time. Toast buns in oven on broil. Spoon mixture into buns and sprinkle with cheese!

1/2 cup Worcestershire
1/2 cup water
1 tsp garlic powder
1 tsp salt
1 tsp chili powder
1 tsp ginger
2 Tbsp minced onion

Mix all together and pour over a 3-4 pound pork loin roast in a crock-pot. Cook low 8 hours. Shred meat and drain excess juice. Add the following

2 cups red enchelada sauce
2 cups brown sugar

Serve on tortillas with black beans, rice, lettuce, olives and whatever toppings you like.

Sweet and Spicy Pork Tenders

5 boneless pork chops
1 pkg. mild taco seasoning
1 Jar apricot jam
1 c. salsa

Cut pork into bite size pieces. Mix pork and taco seasoning into plastic bag and shake well. Then brown meat in 3 tbsp oil, add apricot jam and salsa. Simmer for 15 min. Serve over hot rice.

Beef Pot Pie
INGREDIENTS
1 refrigerated pie crust
1 (10 ounce) package frozen mixed vegetables, thawed
1 1/2 cups diced cooked beef
1 (10.75 ounce) can Campbell's® Condensed Golden Mushroom Soup
1/3 cup water
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
DIRECTIONS
1. Heat the oven to 400 degrees F. Let the pie crust stand at room temperature for 15 minutes or until it's easy to handle.
2. Put the potatoes, vegetables and beef in a 9-inch deep-dish pie plate or 1 1/2-quart baking dish.
3. Stir the soup, water, Worcestershire and thyme in a medium bowl. Pour the soup mixture over the beef mixture. Gently put the pie crust over the beef mixture. Crimp or roll the edges to seal it to the dish. Cut slits in the crust with a knife.
4. Bake for 35 minutes or until hot and the crust is golden brown

1 cup uncooked rice
17 oz can whole kernal corn (not drained)
2 - 8 oz cans tomato sauce
1 1/4 cup water
1/2 cup chopped onion
1/2 cup chopped green pepper
3 cups ground beef, browned
4-6 bacon strips, cooked, drained and crumbled

Combine all ingredients. Cover and bake at 375 for 55 min
