Mini Meatloafs

2 lbs Ground Beef
1 Cup Saltine Crackers, Crushed
1/2 C Onion, Chopped
1/2 C Ketchup
1 tsp Salt
1/2 tsp Pepper
1-2 eggs

Mix all ingredients together and then shape into 6 "mini" meatloafs. Top with more Ketchup when baking. Bake at 350 degrees for 30 minutes. Optional: Top with cheese the last 5 minutes.

Meatball and Sweet Onion Subs

3/4 C Packed Brown Sugar
1 C Water
1 6oz Can Tomato Paste
1 Large Sweet Onion Cut in 1/2 and Sliced
6 Submarine Hoagie Buns, Sliced
1 Cup Cheese

Mix Water, Brown Sugar, and Tomato Paste in a 3-4 quart Crockpot. Stir in Onions and Frozen Meatballs. Cook on Low Heat 6-8 hours. Usually 5-6 is plenty of time. Toast buns in oven on broil. Spoon mixture into buns and sprinkle with cheese!

Sweet Pork Burritos and/or Salads

1/2 cup Worcestershire
1/2 cup water
1 tsp garlic powder
1 tsp salt
1 tsp chili powder
1 tsp ginger
2 Tbsp minced onion

Mix all together and pour over a 3-4 pound pork loin roast in a crock-pot. Cook low 8 hours. Shred meat and drain excess juice. Add the following

2 cups red enchelada sauce
2 cups brown sugar

Serve on tortillas with black beans, rice, lettuce, olives and whatever toppings you like.

Sweet and Spicy Pork Tenders

5 boneless pork chops
1 pkg. mild taco seasoning
1 Jar apricot jam
1 c. salsa

Cut pork into bite size pieces. Mix pork and taco seasoning into plastic bag and shake well. Then brown meat in 3 tbsp oil, add apricot jam and salsa. Simmer for 15 min. Serve over hot rice.

Beef Pot Pie
INGREDIENTS
1 refrigerated pie crust
1 (10 ounce) package frozen mixed vegetables, thawed
1 1/2 cups diced cooked beef
1 (10.75 ounce) can Campbell's® Condensed Golden Mushroom Soup
1/3 cup water
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
DIRECTIONS
1. Heat the oven to 400 degrees F. Let the pie crust stand at room temperature for 15 minutes or until it's easy to handle.
2. Put the potatoes, vegetables and beef in a 9-inch deep-dish pie plate or 1 1/2-quart baking dish.
3. Stir the soup, water, Worcestershire and thyme in a medium bowl. Pour the soup mixture over the beef mixture. Gently put the pie crust over the beef mixture. Crimp or roll the edges to seal it to the dish. Cut slits in the crust with a knife.
4. Bake for 35 minutes or until hot and the crust is golden brown

Spanish Rice Casserole

1 cup uncooked rice
17 oz can whole kernal corn (not drained)
2 - 8 oz cans tomato sauce
1 1/4 cup water
1/2 cup chopped onion
1/2 cup chopped green pepper
3 cups ground beef, browned
4-6 bacon strips, cooked, drained and crumbled

Combine all ingredients. Cover and bake at 375 for 55 min
