Chicken Pot Pie

1 pkg Pie Crusts

Filling
1-3 C Cooked Chicken Diced
1/4 C Butter
1/3 C Flour
1/3 C Chopped Onion
3/4 tsp Salt
1/3 tsp Pepper
1 1/2 C Chicken Broth
1/2 C Milk
2 C Mixed Veggies

Melt butter over medium heat. Add onion and cook until tender. Stir in flour, salt and pepper. Add broth and milk. Heat to boiling and stir constantly for 1 minute. Stir in chicken and veggies. Spoon into crusts. Bake at 425 degrees for 35-40 minutes.

This was a very good pot pie. Even my daughter who normally won't eat pot pie really liked this. We had plenty. Thanks
