Ranch Chicken

Ranch Chicken

6 chicken breasts
1 can cream of mushroom soup
16 oz sour cream
1 pkg ranch dressing mix

Mix soup, sour cream & dressing mix. Pour over chicken in crockpot. Cook on low 4-6 hours. Serve sauce over rice or pasta.

Beef & Broccoli

1 1/2 pounds sirloin steak
1 Tbls oil
1/4 cup ketchup
1 Tbls soy sauce
1 tsp garlic powder
2 cups broccoli, frozen, chopped
1/2 cup vinegar
3/4 cup sugar
1 can water chestnuts

Mix ketchup, soy sauce, garlic powder, vinegar & sugar (set aside) Slice steak into thin strips. Heat oil, cook steak on medium/high. Cook until browned and juices evaporate. Add sauce and bring to a boil. Add water chestnuts & broccoli. Cook over medium heat until broccoli is tender/crisp, stirring often. Sever over rice.

Pizza Roll-Ups

Rhodes bread dough, or your favorite dough recipe (see my recipe below)
Pizza sauce
Mozzarella cheese
Pepperoni

Roll dough out to a rectangle. Spread on sauce, cheese and pepperoni. Roll up like you would cinnamon rolls. Cut in about 1 1/2 - 2 inch sections. (I do it with dental floss).
Place on cookie sheet. Let raise. (Just long enough for oven to pre-heat with the "Everything Dough".) Bake 350 for 20 minutes or until dough is cooked through. Dip in marinara sauce.
If freezing, flash freeze before baking and then store in a freezer bag until ready to bake. The Everything Dough will make enough for 3 big rolls (before slicing)


Everything Dough


4 C hot water
5 1/2 C flour
2 heaping T. yeast
2 T. Sugar


Mix slightly with electric mixer and let rest for 10 min.


Add:


1 T. Salt
1/3 C. Oil
1/3 C. Honey or Sugar
5-6 cups flour


Mix until dough pulls away from side of bowl. Knead in mixer or on a oiled surface. After kneading, prepare dough as directed below, then let sit 10 minutes while you preheat oven.
