Skillet Chicken Enchiladas

1 Can Enchilada Sauce
1 Can Cream of Chicken Soup
2 Cups Grated Cheddar Cheese
2 Cup Cooked Chicken Cubed
6 Flour Tortillas

To make the Sauce:
Mix Soup and Enchilada Sauce in large skillet. Add Cooked Chicken. When sauce is warm, roll cup of cheese into tortilla. Make a trench in the sauce, placing tortilla inside. Spoon chicken sauce over top. When all six rolled tortillas are covered, put remaing cheese on the top. Cover and heat until cheese is melted.

Chili:
1 lb Ground Beef, Browned & Drained
1 Envelope Chili Seasoning Mix
1 80z Can Tomato Sauce
1/2 Cup Water
1 Can Kidney Beans Drained
Mix all together & Simmer 15 minutes.

Cheese & Broccoli Sauce
1 Can Cream of Chicken Soup
1 lb Velveeta Cheese
1-2 Cups Frozen Broccoli
Heat in Saucepan on medium until melted.

1 Packet Au Jus
6-8 Buns/Rolls.

Heat roast beef and Au Jus til hot. Put roast beef on buns and pour Au Jus into cups and serve.

2 Cups Sour Cream
1 Cup Cream of Mushroom Soup
1 Cup Shredded Monterey Jack Cheese
1/2 Cup Green Onions
1/2 Cup Diced Celery
1 Package Stuffing (prepared)

Place chicken in 9x13 pan. Combine sour cream, soup, cheese, green onions, & celery. Spoon mixture over chicken. Prepare stuffing and sprinkle over mixture.

Bake at 375 for 35-40 minutes.

Brown ground beef and onion. Add remaining ingredients and simmer for 15-20 minutes. Serve on hamburger buns.

8 oz pasta, cooked
2 cups diced ham
3 cups diced, cooked chicken
1 can cream of chicken soup

¾ cup sour cream
1 ½ cups grated cheddar cheese
bread crumbs
Cook pasta. Place in 9 x 13 casserole with ham and chicken. In saucepan, heat soup, sour cream, and cheese. Pour over pasta and meat and mix well. Sprinkle with bread crumbs. Cook for 20 minutes at 350.

White Chicken Chili
1 Medium Onion, Chopped
2 Cloves Garlic, Minced
1 Tablespoon Olive Oil
4 Cooked Chicken Breast Halves, Chopped
2 Cans (14oz) Chicken Broth
1 Can (4oz) Chopped Green Chilies
2 Teaspoons Ground Cumin
2 Teaspoons Dried Oregano
1 1/2 Teaspoons Cayenne Pepper
3 Cans (14.5oz) Great Northern Beans, Drained
1 Cup Shredded Mozzarella Cheese

In a large sauce pan over medium heat, cook the onions and garlic in oil for 10 minutes or until onions are tender Add chicken, chicken broth, green chilies, cumin, oregano & cayenne pepper. Bring to a boil.

Reduce heat to low. With a potatoe masher, mash one can of beans until smooth. Add to saucepan Add remaining beans to saucepan. Simmer for 20-30 minutes or until heated thoroughly Top each serving with cheese. Yield: 10 servings (2 quarts)

Candied Crockpot Chicken--From The Crockpot Lade
--6 boneless, skinless breast halves
--1 cup brown sugar
--1/4 cup lemon-lime soda
--2/3 cup vinegar
--3 cloves smashed and chopped garlic
--2 T soy sauce
--1 tsp ground black pepper

The Directions.Use a 5-6 quart crockpot for this recipe. Plop the chicken into your crockpot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.Serve over a bowl of white rice with a ladle full of the broth.

2 cups diced chicken
1/2 cup sliced celery
1/2 cup sliced green onion

2 cups milk


Add chicken, celery, onion and seasoning to stock. Bring to a boil. Add noodles. Cover and cook until noodles are almost tender (5 to 10 minutes). Mix flour with small amount of milk until smooth. Add remaining milk. Stir into soup. Cook to desired thickness. Possum Kingdom Lake Cookbook

Salsa Style Pork

Spray inside of a slow cooker with cooking spray. Combine pork lin, salsa, and chiles in slow cooker and mix well. Cover and cook on low heat for 6-8 hours. Add black beans and stir to mix. Increase heat and cook 10-20 minutes until beans are heated. Sprinkle cheese over top and serve. If desired, serve pork on warm torillas and garnish with sour cream and cilantro.

1 c crushed ritz crackers
1/2 c parmesan cheese
1/2 tsp garlic salt
1/2 tsp pepper
4 tbsp melted butter
Combine crackers, cheese, garlic salt, and pepper. Dip chicken in butter, then roll in mixture. Place in greased baking pan. Bake at 350* for 1 hour

Taco Salad Recipe
1 lb Hamburger, browned
1 Cup Chopped Onions (opt)
1 8oz Tomato Sauce
2 1/2 Cups Water
1 tsp Chili Powder
1 tsp Oregano
1 tsp Cumin
1/2 tsp Salt
2/3 Cup Minute Rice
2 tsp Sugar
1/8 tsp Pepper
Dash of Tobasco Sauce

Mix it all together and bring to a boil. Simmer until rice is tender and sauce thickens. Serve over Frito Corn Chips.

Cheddar Broccoli Soup
1 - 16 ounce pkg frozen broccoli
6 - carrots sliced
4 stalks celery, sliced
1 medium onion chopped
3 cubes butter or margarine
1 1/2 cups flour
10 cups water
10-12 chicken bouillon cubes
1 16 ounce container Cheeze Whiz or Velveeta cheese

Steam Vegetables until almost tender. In a separate bowl, microwave butter or marg until melted. Stir in flour and mix until smooth. In a large saucepan, dissolve bouillon cubes in boiling water. Add a cup of bouillon water to the butter and flour and whisk together. Then add to boiling water and stir. Add drained veggies into soup. Add Cheez Whiz or Velveeta Cheese. Stir until melted.

Taco Soup

Recipe for Taco Soup
1 lb Hamburger
1/4 c Onion
1 1/2 cup Water
1 16oz Can Tomatoes
1 Envelope Taco Seasoning
1 16 oz can Kidney Beans
1 16 oz can Black Beans
1 16 oz can Corn
1 8 oz can Tomato Sauce

Cook hamburger and onions until meat is brown and drain fat. Add water and remaining ingredients. Simmer covered 15 minutes.

Top with sour cream, shredded cheese, corn chips & avacados (optional).

Caesar Chicken Casserole

Caesar Chicken Casserole
1 1/2 lbs chicken breast, cut into 1/2" pieces
1/2 cup red bell pepper, chopped
1/2 cup green onions, chopped
1/3 cup light creamy caesar dressing
1/2 cup chicken broth
1 1/2 cups mozzarella cheese, grated
1 12 oz tubed pasta (such as penne or macaroni), cooked and drained
1/4 cup croutons

Combine all ingredients but croutons, mixing well, in a 2 quart baking dish. Allow to cool and freeze.

From freezer: Thaw casserole. Top with crushed croutons and bake in 350F preheated oven for 30 minutes or until topping is browned and casserole is bubbly.

Recipe for ABC Meatball Soup
Meatballs
1/2 cup dried bread crumbs
1/2 cup paremsan cheese
2 tablespoons chopped onion
1 minced garlic clove
1 tablespoon dried parsley
2 teaspoons dried basil
1/2 teaspoon salt
1 large egg, lightly beaten
1 lb lean hamburger

Combine all meatball ingredients and mix well. Shape into balls. Put on a cookie sheet and bake at 350 degrees for 25 minutes.

2 tablespoons olive oil
1 small onion chopped
1 celery rib, chopped
1 garlic clove minced
5 cups chicken broth
1 cup crushed tomatoes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 cup alphabet pasta

Heat oil in a large saucepan or medium soup pot. Add the onion celery and garlic. Cook over moderate heat for 8-10 minutes. Add the remaining ingredients except for the pasta and bring to a simmer. Add the pasta and cook for 8-10 minutes. Add the meatballs and simmer until heated through.

10-12 Chicken Tenders cut into chunks
1 Cup Chicken Broth
2 Cans Cream of Chicken Soup
1 Can (12oz) Evaporated Milk
6 Cups Cooked Rice

Place chicken in a greased slow cooker. Combine all remaining ingredients except rice and pour over chicken. Cover and cook on high heat 3-4 hours or on low 6-8 hours.

Serve over hot rice with variety of cold toppings that could include: grated cheeses, peas, pineapple tidbits, shredded coconut, raisins, chinese noodles, olives, diced tomatoes, green peppers, green onions, etc.

1lb Hamburger
1 can Corn
1 can Whole Tomatoes
1 can Green Beans
1/4 whole onion chopped
1 can Beef Stew
1/2 Cup Beef Broth
1 can Italian Tomatoes
1 tsp Salt & Pepper
Mashed Potatoes

Directions
Fry your meat with onions, omit all the fat. Crush cans of tomatoes. Mix meat, tomatoes, stew and broth together and place in a casserole dish. Sprinkle with salt and pepper. Cover with corn and green beans, and then top with mashed potatoes. Then brush butter on top.

Place in oven at 325 degrees for about 40 minutes or until you see a golden crips top. Sprinkle with cheese 2 minutes before done.

Asian BBQ Chicken

1/4 C packed brown sugar
1/4 C soy sauce
2 T lime juice (about 1 lime)
1/4 t cayenne pepper
1/4 t curry powder
3-4 garlic cloves, minced
1 t grated fresh ginger
6 boneless, skinless Chicken Breasts

Combine everything but the chicken in a small bowl. Whisk to dissolve brown sugar. Place the marinade, with the chicken, in a zip-lock bag. (If your chicken pieces are extra large and you feel like you need a little more marinade, you can always add a bit of water to stretch it.) Pop that bag in the fridge for a minimum of 4 hours, but overnight is best.Preheat a grill (or an indoor grill pan or broiler). Spray cooking surface with cooking spray and place chicken on it to cook. Cook for 5-10 minutes on each side depending on the thickness.

Here is a recipe for Lime Cilantro Rice that goes really well with the chicken

Lime-Cilantro Rice with Pineapple
Like I said, you really can just make this to taste, but here’s the basics.
1 cup Dry White Rice, Cooked
2 T real butter
Juice from 1 large lime or two smaller ones (taste as you go, I add a lot!)
1 C pineapple tidbits, drained
½ - ¾ C chopped fresh cilantro
Salt and pepper to taste
Cook rice. As soon as it’s done, toss in the butter and stir to melt. Add lime juice, pineapple, and cilantro. Stir to combine, and then add salt and pepper to taste. Serve immediately.
* You’ll want to serve this right away, if you don’t, the flavors tend to mellow a bit and you’ll probably need to add more lime juice because the rice kind of sucks it up. If you’re not quite ready to eat when your rice finishes cooking, just toss in the butter and keep a lid on it so it stays warm. Then right before you serve it, toss it all together.

1 1/2 lbs Cubed Chicken
1 pkg Dry Italian Dressing Mix
1 can Cream of Mushroom Soup
8 oz Sour Cream

Mix together chicken, soup, & Italian dressing. Cook in a slow cooker for 6-8 hours. With a slotted spoon, remove chicken and keep warm. Mix sour cream with cooking juices in slow cooker. Heat until warm. Serve chicken over noodles and pour sauce on top.

Simmer 1 hours and let stand overnight.

3 Cups Cooked Chicken, Cubed
2 Cups of Various Veggies of your choice
1 can Cream of Chicken Soup
1/2 Can Cream of Mushroom Soup or 1/4 Cup Milk
2 Pie Crusts for top & Bottom
Directions:
Spray a 9-inch pie dish. Line bottom of pie dish with one piecrust. Cook chicken in skillet with 1 TB of oil and season & cook til done. Dice into bite-sized cubes. While chicken is cooking, mix creamed soups together. Stir in frozen vegetable. Stir in chicken when done and pour into piecrusts. Bake at 400 degrees for 30-40 mins. Top crust should be golden brown. Take out of oven and let cool at least 15 minutes. TIP: To prevent burned crust, cover outer edges of crust with thin pieces of foil. When crust is golden brown, remove foil, bake an additional 5-15 minutes until outer crust is to your preference. Serves 6.

2 tsp salt

1 tsp oregano
2-3 pounds of chicken cut in 1-2 inch pieces.

Combine the onion, garlic, olive oil, lemon juice, salt, pepper, and oregano in a glass bowl or casserole dish. Add the meat and stir well. Marinate for 3-4 hours. Cook on a countertop grill, or on a barbecue grill. You can also broil.

Salsa Chicken

--6-9 chicken thighs, or equivalent body parts
--1 can rinsed black beans
--1 cup chunky salsa
--1 cup frozen white corn

The Directions. Put your chicken in the crockpot; mine was still frozen. Top with the rinsed black beans, salsa, and corn. Cover and cook on low for 6-9 hours, or on high for 4-5. Cooking time will vary depending on whether or not your chicken is frozen, and how big the pieces are.If you decide to use breasts, increase your salsa by 1/2 cup. Breasts are drier than thighs.

Lemon Chicken

Here is the Recipe:
6 Chicken Breasts or Thighs
1 12oz Can Frozen Lemonade
6 TB Brown Sugar
1 tsp Salt
2 tsp Balsalmic Vinegar
6 TB Ketchup

Mix last five ingredients and let marinate over chicken overnight for best results or 2 hours. You can crockpot for 6-8 hrs or grill til juices run clear. Serve with rice if desired.

5 Cups Cooked Chicken
2 TB Oil
3 Cups Sliced Fresh Mushrooms
4 tsp Flour
1 1/3 Cups Water
1 Can Frozen Orange Juice Concentrate
1/3 Cup Brown Sugar
1 Cup Slice Green Onions
4 tsp Chicken Bouillon Powder or 4 Cubes
2 Can Mandarin Oranges
Cooked Rice

Cook the mushrooms in the oil in a large skillet, stirring constantly. Add flour, stirring well. Add water, orange juice, chicken bouillon, brown sugar & onions. Bring to a boil, reduce heat and add chicken, simmering uncovered 3-4 minutes. Cool and pour into freezer containers.

Thaw completely. Put in a sauce pan, add two cans mandarin oranges, drained, and heat until bubbly. Serve over cooked rice.

Just a Reminder

Just a reminder we will be meeting at Marci's house on Tuesday at 10:00am. If anyone has schedule conflicts during the summer with Tuesday or the time of day let me know and we can try to change if possible but it is easier to keep it the same time & date.

The summer schedule is listed below so check for calendars for family vacations, lessons, etc.
July 8th @ 10:00am
August 12th @ 10:00am

I do have room in my freezer for 2 or 3 of people if you can't make it on that date & you can drop off meals early and pick them up when you get back. Just let me know ahead of time...its really no trouble.

Welcome to Our Blog!

This blog is for our freezer meal group to exchange recipes and give feed back on meals. What I will try to do make a post for each meal every month and then you can leave comments in the comment section. You do not have to have an email address or sign up up with blogger to be able to do this; you can leave anonymous comments. Also I will email everyone in the group the login ID and password so you can post recipes or ideas. Blogging really is easy once you know the steps and I think this will be a great way to improve our meals and share recipes!
